Is a Shun Knife a Good Knife?
"So what constitutes a good knife?" You may be asking out loud - it's okay. There are many parts to the knife including the blade, the butt, and the scales. The blade should be of high quality steel - the handle could be synthetic, wood, or rubber. All have their pros and cons. Wood handles are porous so the bacteria can hang around. Some knife sets use the rubber grip handles but the rubber wears out and is porous. There are a few synthetic materials out there that should work well - although many chefs prefer the traditional wood grip. Shun Knife and the Importance of Balance Balance is very important in a knife, so if you're using some of the synthetic handles you may notice that you are not as skilled when preparing food with the knife.
